Cooking vessel made of AISI 304 stainless steel with steam heating.
The product is heated through a jacket, on a flat bottom and, on request, also on the sides. This configuration ensures excellent heat exchange and therefore fast and uniform heating of the product.
The vessel can be manufactured in a fixed-tilting version or in a tipping version, depending on the end user’s requirements.
Vacuum cooking offers several advantages, such as:
- Low processing temperature: preserves the flavour and texture of the product
- Reduced oxidation: prevents deterioration while maintaining natural colour
- Preservation of nutritional properties: ideal for healthy and genuine purées and jams
